White bean & kale soup

  1. 1Add the veg

    Toss in 1 cup of kale and cook for 2 minutes until slightly softened.

  2. 2Add beans

    Pour in 1 cup of white beans and stir.

  3. 3Add liquid

    Pour in 2 cups of vegetable broth and bring to a boil, then reduce to a simmer.

  4. 4Simmer and taste

    Let it simmer 10-15 minutes until everything is cooked through and the flavors come together. Taste and adjust salt.
