  1. 1Press and crumble tofu

    Pat the tofu dry with paper towels, then crumble it into small curds with your hands or a fork.

  2. 2Season the tofu

    Heat a nonstick skillet over medium heat with a small spray of oil. Add tofu, turmeric, salt, and pepper. Cook 3-4 minutes, stirring often, until the tofu is hot and lightly golden.

  3. 3Add beans

    Stir in the black beans and cook 2 minutes, just until warmed through.

  4. 4Wilt spinach

    Add spinach and stir for 1 minute, until it wilts but stays bright green.

  5. 5Toast bread

    Toast the bread while the scramble finishes.

  6. 6Serve

    Spoon the scramble onto a plate, top with salsa, and serve with the toast.
