Instructions
- 1Mix the batter
Combine 1/2 cup of protein pancake mix, 1 egg, and 1/3 cup of milk in a bowl. Stir just until combined — lumps are fine.
- 2Heat the pan
Heat a non-stick skillet or griddle over medium heat. Add a tiny spray of oil or small pat of butter.
- 3Cook the pancakes
Pour about 1/4 cup of batter per pancake. Cook until bubbles form and pop on the surface and edges look set, about 2 minutes. Flip and cook 1 more minute.
- 4Add fruit
Top with 1/2 cup of berries.
