  1. 1Pour egg whites

    Pour 1 cup of egg whites into a bowl — no whisking needed.

  2. 2Heat the pan

    Get a non-stick skillet over medium heat and add a small spray of oil or pat of butter.

  3. 3Add the filling

    Throw in 1 cup of spinach and stir for 1 minute until slightly softened.

  4. 4Pour in eggs

    Pour the eggs in and let them sit undisturbed for 30 seconds until the edges set.

  5. 5Add cheese and fold

    Sprinkle 1/4 cup of shredded mozzarella cheese on one half, then fold the omelette over and slide onto a plate.

  6. 6Top and serve

    Plate it and hit it with 2 tbsp of salsa.
