  1. 1Cook the base

    Heat 1/2 cup of rice in a skillet with a little oil over medium-high until golden and crispy on the outside, about 4-5 minutes.

  2. 2Heat the protein

    Add 1/2 cup cooked of ground turkey to the skillet and stir to combine with the base. Cook until warmed through.

  3. 3Cook the eggs

    Push everything to the side of the pan. Crack 2 eggs in the cleared space and cook to your preference — scrambled, fried, whatever you like.

  4. 4Add cheese

    Scatter 1/4 cup of shredded cheese over the hot mix so it melts.

  5. 5Top and serve

    Spoon into a bowl and hit it with 2 tbsp of salsa.
