Instructions
- 1Cook the base
Heat 1 cup of diced potatoes in a skillet with a little oil over medium-high until golden and crispy on the outside, about 4-5 minutes.
- 2Heat the protein
Add 1/2 cup cooked of ground beef to the skillet and stir to combine with the base. Cook until warmed through.
- 3Cook the eggs
Push everything to the side of the pan. Crack 2 eggs in the cleared space and cook to your preference — scrambled, fried, whatever you like.
- 4Add cheese
Scatter 1/4 cup of cheddar cheese over the hot mix so it melts.
- 5Serve it
Transfer to a bowl and eat right away.
