Pork sausage & egg muffins

    Heat the oven to 375 F and grease 3 muffin cups.

  2. 2Whisk eggs

    Whisk eggs with a pinch of salt and pepper until the yolks and whites are fully combined.

  3. 3Fill cups

    Divide sausage, spinach, bell pepper, and cheese between the muffin cups.

  4. 4Add eggs

    Pour the eggs over the filling, stopping just below the top of each cup.

  5. 5Bake

    Bake 13-15 minutes, until puffed and set in the center.

  6. 6Cool briefly

    Let the muffins cool 2 minutes before removing so they hold together.
