Instructions
- 1Warm lentils
Add lentils, cumin, salt, pepper, and 1 tablespoon water to a skillet over medium heat. Cook 2-3 minutes, stirring until hot.
- 2Wilt spinach
Stir in spinach and cook 1 minute, until just wilted.
- 3Cook eggs
Push the lentils to one side of the skillet. Crack in the eggs and cook them sunny-side up, scrambled, or over-easy.
- 4Build bowl
Spoon lentils and spinach into a bowl, then slide the eggs on top.
- 5Finish
Add avocado slices and salsa before serving.
