  1. 1Cook sweet potato

    Pierce the sweet potato with a fork and microwave 5-7 minutes, until tender. Split it open and season with salt and pepper.

  2. 2Whisk eggs

    Whisk eggs with a pinch of salt and pepper.

  3. 3Cook vegetables

    Heat olive oil in a nonstick skillet over medium heat. Cook bell pepper 2 minutes, then add spinach for 30 seconds until wilted.

  4. 4Add eggs

    Pour eggs over the vegetables and tilt the pan so they spread evenly.

  5. 5Fold omelette

    When the edges set and the top is still slightly glossy, fold the omelette in half and slide onto a plate.

  6. 6Serve

    Serve with the sweet potato on the side.
