
Ingredients
- 1/2 block, pressed and cubedfirm tofuBuy on Amazon
- 1 cup, choppedbroccoliBuy on Amazon
- 1 cupsnap peasBuy on Amazon
- 1 tbspsoy sauceBuy on Amazon
- 1 tsp, gratedgingerBuy on Amazon
- 1/2 cupcooked brown riceBuy on Amazon
Instructions
- 1Press tofu
Pat tofu dry and cube it. If you have time, press it for 10 minutes first.
- 2Crisp tofu
Heat a nonstick skillet over medium-high heat with a little oil. Cook tofu 3-4 minutes per side, until golden.
- 3Cook vegetables
Add broccoli and snap peas with a splash of water. Stir fry 3-4 minutes, until bright and just tender.
- 4Add sauce
Stir in soy sauce and grated ginger. Toss until tofu and vegetables are coated.
- 5Serve
Spoon over warm brown rice.
