Instructions
- 1Cook the pasta
Boil chickpea pasta in well-salted water until al dente — about 1 minute less than the package says. Drain and save a splash of pasta water.
- 2Heat the protein
Warm 1/2 cup cooked of chicken breast in a skillet until hot.
- 3Combine everything
Toss the drained pasta into the sauce and stir to coat. Add a splash of pasta water if it looks tight.
- 4Finish with cheese
Grate or sprinkle 1/2 cup of cottage cheese on top and serve hot.
