    Heat the oven to 425 F.

    Toss zucchini and bell pepper with half the olive oil, salt, pepper, and herbs. Season pork with salt, pepper, and remaining herbs.

  3. 3Roast

    Roast vegetables and pork on a sheet pan for 16-20 minutes, until vegetables brown and pork is cooked through.

  4. 4Rest pork

    Rest pork 3-5 minutes before slicing.

  5. 5Serve

    Plate sliced pork with roasted vegetables.
