Instructions
- 1Start the potatoes
Heat oil in a large skillet over medium-high. Add 1 cup of potatoes and cook without stirring for 3-4 minutes until a golden crust forms, then stir and cook 3 more minutes.
- 2Cook the protein
Add 1 chicken breast to the skillet and cook until browned, breaking it up as needed, about 4-5 minutes.
- 3Season it
Add 2 tbsp of salsa and toss everything together so it gets evenly coated.
- 4Melt the cheese
Sprinkle 1/4 cup of shredded cheese over the top, cover the pan for 1 minute so it melts, then serve straight from the skillet.
