Chicken fajita bowl

  1. 1Slice the protein

    Slice 1 of chicken breast into thin strips — about 1/4 inch thick so they cook fast.

  2. 2Season everything

    Toss the protein and vegetables with 1 tbsp of fajita seasoning until evenly coated.

  3. 3Get the pan ripping hot

    Heat a cast iron or heavy skillet over high heat until it's smoking slightly.

  4. 4Sear the protein

    Cook the chicken breast strips in a single layer without moving for 2 minutes to get a char, then stir and cook 2 more minutes.

  5. 5Cook the veg

    Remove the protein and add 2 cups of peppers and onions and 2 cups of peppers and onions. Cook 3-4 minutes until they get some char and start to soften.

  6. 6Assemble

    Load the protein and veg into the tortilla. Add any toppings and fold.
